Working on my Wheat Belly and Type II Diabetes,

I have been Wheat free since 12/26/12 I was taking 44 units of Lantis (insulin) a day plus metfomin I have dropped to 25 units as of today and am feeling great I will keep you updated, I hope to be off Lantis within 3 months. My morning sugar test has been between 100-125 this AM 117 used to average 135-170

You may be wondering about the bridge.

We found the Bridge over the New River Gorge as one finds most things of rare beauty; serendipitously.

Meandering is our preferred mode of navigation.  Thus, we left the Interstate in search of an adventurers’ route from Michigan to any point along the Appalachian Trail.  An early-fall drizzling rain was just cold enough to dampen our curiosity as we traveled though God’s Country West Virginia along limited access Route 19 near Fayetteville.  “If you see some place you want to stop” became “Hey babe, as soon as you find a place to pull over…”

The Visitor Center at the Bridge over New River offered a short respite but after hours in the car, we needed a walk.  Drizzle turned to sporadic showers as we debated the advisability of descending the wet wooden stairs that lead to the nature trail or return to the heated seats of our truck.  Use-it-or-lose-it mentality kicked in and we slip-slid our way down 8 flights to a fog shrouded platform.

A shrug, a kiss, a last disappointed look over the platform and then the mist dissolved into elation, amazement, awe— the apogee of industrial architecture in juxtaposition to nature’s bountiful beauty.

Laying off the Wheat

Wheat free! Since the 26th of December we have been Wheat free, no wheat means things like licorice, cereal, toast, muffins, and of course Pizza! That means if it says Gluten free it’s ok to eat, so Saturday the 19th we went to Pensacola for a grocery trip to pick up some great cheese from Four Winds fine food market, and we decided to go to lunch at Mellow Mushroom for a gluten free pizza, we are anticipating the carb rush we’re about to have. What we discovered is the gluten free dough tasted ok but there was no carb rush, you get full faster and are not interested in taking the leftovers home. With the wheat dough we would have cleaned all of the 14 inch pizza and would want to hungry again when we came off the carb rush or sugar rush of the wheat. The wheat today is a drug and the Government with there healthy food suggestions to eat more whole grains and American Diabetes Association that says whole grains are good are supporting the wheat drug trade. Tomorrow I will be one month wheat free and I will tell you what that has meant to me.

Why Wanda and Larry Hoffman are Blogging

Wanda and I have been married since 1979 She has always been the healthy one, exercising  and eating things that were good for her. She started eating wheat free long before it was talked about, but living with three men in the house it was hard for her to keep it up. I have always been the one that figured I could eat anything unless it was green.

In August of 2012 Wanda and I decided on a major change in our lifestyle and decided to start practicing yoga on top of our swimming routine.  Wanda has been an avid swimmer for most her life, and I have been swimming since May 2006 shortly after I quite smoking.  We swim 3 to 4 days a week averaging 2,000 Meters in less than an hour. We enjoy bike riding and kayaking  on the weekends.

We are changing all that and hope to share those travels here. Starting in February 2013 we start our Training to become Yoga Instructors with Dragonfly Studios in Fort Walton Beach, Florida and we want to share that with our friends and family.
